Healthy Spicy Chicken Salad

Healthy Spicy Chicken Salad

Serves 4

Ingredients:

- 200g easy cook long grain rice
Zest & juice of 2 limes
500g chicken breast (4 fillets) cut into thin strips
1 tbsp Cook With Recipe Paste For Pulled Pork
4 tbsp chopped coriander leaves
½ iceberg lettuce, shredded
1 red pepper, de-seeded and finely sliced
6 trimmed spring onions, sliced
4 tbsp soured cream and chive dip
432g can pineapple chunks, drained or ½ small pineapple, diced
4 tbsp Chipotle & Corn Salsa (optional)

Method:

  1. Cook the rice, drain thoroughly then add the lime zest and half the coriander leaves. Set aside to cool.
  2. Toss the chicken with the pulled pork paste then stir fry in a non-stick frying pan over a medium heat for 3-4 minutes or until just cooked through.
  3. Layer the salad into 4 individual bowls, starting with the lettuce, then the rice, red pepper, spring onions, warm chicken and soured cream dip.
  4. Mix the lime juice with any pan juices and drizzle over the salad before topping with the pineapple.

Perfect with pitta and dollops of guacamole... or to simply graze.


Why not try...

Adding 2 roughly chopped tomatoes or 1 chopped avocado at stage 3 with a sprinkling of fiery dried red chilli flakes or chipotle chilli flakes.
