Prawn masala with two rices

Serves 2


- 1 Onion sliced
- 2 Garlic cloves crushed
- 10g Fresh ginger pureed
- 1g Ground cumin
- 1g Ground coriander
- 70g Fresh ripe tomatoes finely chopped
- 1tbsp Olive oil
- 15g Tomato puree
- 2g Salt
- pinch Ground turmeric
- Pinch Chilli powder
- Squeeze Lemon juice
- 5g Mustard seeds
- 8g Desiccated coconut
- Pinch Fennel seeds
- 1g Garam masala
- 5g Green chilli finely chopped
- 80g Tiger prawns from M&S
- 20g Raw Basmati rice cooked approx 160g
- 65g Raw Wild or red rice cooked approx 40g
- 10g Fresh coriander chopped roughly


  1. Heat pan at a gentle heat and add oil and onion cook until soft, add garlic, green chilli,ginger and dessicated coconut cook for 2 minute
  2. Add mustard / fennel seeds, chilli, cumin ,coriander, turmeric powders and garam masala and cook out for 5 minutes
  3. Add tomato puree and fresh tomatoes
  4. Cook out for 10 mins on a gentle simmer and add prawns
  5. At the same time Place wild rice in pan with water and cook for 10 minutes
  6. Add basmati rice and cook for further 15-20 minutes until rice cooked and water absorbed
  7. Turn of heat and place lid on so gently steams
  8. To serve place rice in bowls, add prawn masala and sprinkle with coriander
