100g soba noodles
1 tbsp sunflower oil
1 onion, sliced
1 garlic clove, sliced
2.5cm piece root ginger, peeled and grated
1 red chilli, deseeded and finely sliced
1 red pepper, deseeded and sliced
1 yellow pepper, deseeded and sliced
2 x 140g packs Honduran raw prawns
170g kale, any tough stalks removed and large leaves chopped
2 tbsp soy sauce
1 tbsp mirin
½ x 25g pack fresh coriander, roughly chopped
2 tbsp M&S Seed and Nut Mix Roasted in Soy Sauce
- Cook the noodles according to packet instructions. Meanwhile, heat the oil in a wok or large frying pan. Add the onion and stir fry over a high heat for 2 minutes. Add the garlic, ginger and chilli and stir fry for a further minute. Tip in the peppers and stir fry over a high heat for 3-4 minutes. Add the prawns and stir fry for 2 minutes, until pink and cooked though.
- Add the kale to the wok with a splash of water and stir fry for 2 minutes, until tender. Finally, stir in the soy sauce and mirin, and allow to bubble for a few seconds. Stir in the coriander and scatter over the seed and nut mix. Serve with the noodles.
