Spicy Prawns, Olives and Wholemeal Spaghetti

Serves 2

Ingredients:

- 130g Wholemeal Spaghetti
- 10g Sunflower and pumpkin seeds
- 120g Cooked tiger prawns
- 50g Sliced red and yellow peppers
- 20g Black olives
- 20gms Spinach
- 25gms 1 small shallot
- 1 Garlic clove
- 1 tbsp Olive oil
- 25g Tomato puree
- Pinch salt
- Pinch Fresh ground black pepper
- Pinch Chilli powder
- 100gms Tomato pasatta
- 100gms Vine ripe cherry tomatoes
- 10gms Fresh basil sprigs shredded

Method:

  1. Heat pan on a gentle heat add olive oil, shallot , peppers and garlic cook 2 minute
  2. Add tomato puree, vine ripe tomatoes and chilli powder and cook out for 2 minutes
  3. Add pasatta, salt, and black pepper
  4. Gently cook out
  5. Fill a deep pan with water and boil, add pasta and cook for 8 minutes
  6. Drain pasta in colander and place back into pan
  7. Add raw spinach and prawns, add warm sauce and toss together
  8. Serve into two bowls
  9. Sprinkle olives, torn basil leaves and seeds over the pasta
