Squash Lentil and Bean One Pot With Fig Raita

Serves 2


- 400g Butternut squash (diced)
- 1 Onion Sliced
- 1 tbsp Olive Oil
- 5g Ground cumin
- 1g Chilli Flakes
- 400g Can of chopped tomatoes
- 100g Dried Lentils
- 25g Brown sugar
- 50g Red Wine Vinegar
- 400g Kidney beans, drained and rinsed
- 50g Soft figs
- 150ml Low fat Greek yoghurt
- 5g Freshly chopped parsley


  1. Fry butternut squash and onion in oil for 5 minutes until onion is softened, add cumin and chilli for 1 minute. Add tomatoes plus 1 can of water from the tomato can, the lentils, sugar and vinegar.
  2. Bring to a simmer and cook for 10 minutes, then stir in the beans and cook for a further few minutes until lentils are tender and the beans heated through.
  3. Meanwhile, mix the figs, yogurt and parsley together. Season, then serve in bowls with fig raita on the side.
